Simple Side Dish: Garlic Roasted Carrots

Either as a Thanksgiving side dish or part of a weeknight meal, these garlic roasted carrots look impressive, are super very simple to make and full of important nutrients.

Carrots are loaded with beta carotene, a powerful antioxidant found in orange fruits and vegetables like carrots, butternut squash and cantaloupe. Beta carotene plays a role in supporting healthy vision, skin and immunity...pass the carrots, please!

Garlic Roasted Carrots
Serves: 6

1 lb medium carrots, peeled
4 garlic cloves, minced
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp dried thyme
Salt and pepper, to taste


  1. Preheat oven to 400 degrees.
  2. Place carrots in a single layer on a lined baking sheet. Toss carrots in olive oil, balsamic vinegar, garlic, thyme, salt and pepper.
  3. Roast in oven for 40-45 minutes, until lightly browned and tender.
